On review of their environment, AD is currently utilizing all 15 custom attributes, so wanted to know if we could use other attributes in AD for the QMM Service Attributes, and if so, how? -

Resolução
It's possible to use other attributes for QMM stamping. There are several requirements:
- attributes should be a part of PAS (partial attribute set) so they can be replicated into Global Catalog
- attributes should be a Unicode string value with a rangeupper minimum of 1024 and not a multi value attributePlease consult Microsoft article for more information regarding PAS: Active Directory: Attributes in the Partial Attribute Set - TechNet Articles - United States (English) - TechNet Wiki (microsoft.com)
Also, Active Directory schema can be extended, however that should be done by AD admin before creating a domain pair in QMM.
