EMWMTA.log or EMWCSA.log shows entries similar to:

Attempting the same operation manually using MFCMAPI causes MFCMAPI to freeze upon selecting 'Logon and Display Store Table'.
Attempting to view a list of MAPI profiles in MFCMAPI using '| Profiles | Show Profiles' shows:

Exporting HKEY_CURRENT_USER\Software\Microsoft\Windows NT\CurrentVersion\Windows Messaging Subsystem\Profiles results in a very large file (4 GB +).
This is a known issue in QMM 8.7 in which the Mail Target Agent and Calendar Synchronization Agent create, but do not delete, MAPI profiles during the sync process.
This results in a very large "Profiles" registry key, and eventually MAPI logins time out.
STEP 1
To remove the temporary MAPI profiles, delete the Windows profile for the QMM service account:
Stop the problematic agent.
Login to the problematic agent host as a local admin.
Validate that the Windows profile for the QMM service account can be safely deleted.
Stop any services that might still be running under the QMM service account (e.g. 'Quest Migration Attendant for Exchange').
Delete the Windows profile for the QMM service account.
Start the agent.
STEP 2
Download and install the latest update for QMM for Exchange 8.7 (see SOL77417).
