In Foglight, when a replication publication / replication subscription is not longer monitored, it still appears listed in the dashboard.
Is there any way to remove those replication publication / subscriptions?

The data of replication publications and subscriptions can be found in a path similar to:
Replication Publication:
DBSS_Data_Model -> Clusters -> DB_Instance_Name -> Instances -> DB_Instance_Name -> Replication -> SQL Server Replication Publications -> Publisher Servers -> DB_Instance_Name -> Publisher Databases -> Publication_DB_Name -> Publications
Replication Subscriptions:
DBSS_Data_Model -> Clusters -> DB_Instance_Name -> Instances -> DB_Instance_Name -> Replication -> SQL Server Replication Subscriptions -> Subscriber Servers -> DB_Instance_Name -> Subscriber Databases -> Subscription_DB_Name -> Subscriptions
If the data of the replication / subscription wants to be removed, it will be necessary to delete the publication / subscription.
