VM that is being Restored consists of a mixture of eager-zeroed and lazy-zeroed disks.
3 eager-zeroed disks on the VM combined have over 3 TB in size.
Eager-zeroed disks creation is much longer than lazy-zeroed, causing a timeout visible in vCenter.
When creating the same size, blank Eager-Zeroed disk in vSphere, same timeout was reproduced.
Two possible solutions:
1. Restore Eager-Zeroed disks individually, in separate Restore jobs.
Once the Restore is done, consolidate those disks into one VM in vSphere.
Refer to the KB article here in order to restore a single disk
2. Contact VMware to increase the default timeout that is reached when creating a VM
