Excluding offline database when selecting multi database backup option

I need to be able to do a multi-database backup of all user databases except for one db. I keep finding references to excluding a db online and in help, but no examples in either the GUI or resulting T-SQL. There are hundreds of databases, so I don't want to select them. I also need to know how to exclude offline databases
