Subscription has been deleted and all stub objects have been removed from AD.
Now, when trying to send an e-mail to previous partners it fails and an NDR is being generated immediately.
It fails with an NDR when trying to reply to an old e-mail, when composing a new e-mail and typing recipients name manually, it even fails when creating a contact with destination address user@target.com.
NDR message states:
Delivery has failed to the recipients or distribution lists:
'<someone>'
<mailto:<someone>@<example.com>>
The recipient's e-mail address was not found in the recipient's e-mail system. Microsoft Exchange will not try to redeliver this message for you.
Please check the e-mail address and try resending this message, or provide the following diagnostic text to your system administrator.

The LEDN of the user shown in the diagnostic information of the NDR message is invalid and not present in this environment anymore.
This information is cached and stored inside the users NK2 file (autocomplete).
WORKAROUND
Remove the NK2 file located at "C:\Users\[User Profile]\AppData\Local\Microsoft\Outlook\RoamCache" this should resolve the problem.
WORKAROUND 2
Create a new fresh Outlook profile.
WORKAROUND 3
1. Check the LEDN of the Stub object (subscribing side) and confirm that there are not any special charectors
2. Delete the Stub Object from the subscribing side
3. Change the Display name on the publishing side so that there are no special charectors
4. Republish Publication or create a new publication for the troubled user object(s)
