The backups have completed successfully.
Preforming a File Level Restore completes successfully.
Unable to perform a full restore on a hard disk, the hard disks shown are greyed out as the following screenshot shows:

Within the vSphere client the VM files reside directly on the Datastore and not within a VM folder.
This does not follow Vmwares best practises.
The manifest.metadata file shows the following:

Possible workarounds
1. Add a folder path in the manifest.metadata
For example:
The manifest.metadata file shows the following:
<FileMapEntry SourceFile="'vix:r:vc-vs5-suplab01.prod.quest.corp:902:[test] New Virtual Machine.vmdk'"
You will need to add any folder name to the path - in this example FolderA has been added.
<FileMapEntry SourceFile="'vix:r:vc-vs5-suplab01.prod.quest.corp:902:[test] FolderA/New Virtual Machine.vmdk'
Restart the vRanger service.
The disk selection is now available on the restore wizard.
2. Use VM folders on the datastore for VM's.
