Option 1
Only a small number of VMWare images need to be monitored ,in that case you will be able to set the affinity of the sniffer image to the VMWare image that needs to be monitored and lock them together, then when the monitored image VMotions to another ESX host the sniffer moves with it and the monitoring continues.
Option 2
The other is where you are monitoring more VMWare images then you have ESX hosts, in that case you will need to install one sniffer on each ESX host and lock it to that ESX host. You will then need to configure the sniffer to monitor everything. Then when the monitored images move from one ESX to the other it will be monitored by the sniffer on that machine.
You use the configuration that allows you to install the smaller number of sniffers.
